Baking treats on Sunday

Here are a couple of my favourite recipes from the good old Kiwi Edmonds cook book:

Sunday baking treats for the kids

Peanut brownies: (in the middle)


Ingredients

125g butter, softened
1 cup sugar
1 egg
1½ cups standard flour
1 tsp baking powder
pinch of salt
2 Tbsp cocoa
1 cup roasted unsalted peanuts

Method

1. Preheat the oven to 180ºC. Line two baking trays with baking paper.
2. Cream the butter and sugar until light and fluffy. Add the egg and beat well.
3. Sift the flour, baking powder, salt and cocoa together and add to the creamed mixture. Add the peanuts, roughly chopped if you wish, and mix well.
4. Roll tablespoonfuls of the mixture into balls, place on the prepared trays and press down with a floured fork.
5. Bake for 15 minutes or until firm and coloured on the base. Leave on the trays for 1–2 minutes then place on a wire rack to cool.

Ingredients

200g butter, softened
1/2 cup sugar
11/4 cups standard flour
1/4 cup cocoa
2 cups cornflakes
Chocolate Icing
24 walnuts (optional)

Method

1. Preheat oven to 180ºC. Grease or line a baking tray with baking paper.
2. Cream butter and sugar until light and fluffy. Sift flour and cocoa. Stir into creamed mixture. Fold in cornflakes ( I used weetbix).
3. Spoon mounds of mixture onto the tray, gently pressing together.
4. Bake for 15 minutes or until set. When cold ice with chocolate icing and decorate with a walnut if wished.

Yum,  and yes it was all gone by the end of the day.
